Yield of an crossbred charolais/aubrac heifer

To spend the winter with some reserves, we have fed a cross Aubrac / Charolais heifer which allows us to have information on the carcass yield and that in net meat.



The heifer weighed 752 kg alive for a carcass weight of 433 kg, a yield of 57% with a U = classification. We then had the carcass cut by a butcher and we obtained 320kg of meat, a meat / carcass yield of 74%. The heifer was slaughtered at 37 months after a 3-month fattening period without any previously concentrated feed.



Beyond these satisfactory yields we were hit and especially our butcher by the quality of the meat and carcass with a very beautiful meat and very little waste. The Aubrac flower is aptly named.
